Apple cinnamon muffins
I swear this is the last muffin recipe for a while but I’ve had a little of a sweet tooth lately. That being said these muffins are hard to stop eating. If you plan on sharing two batches might be a sound plan. Remember you have been warned, but no seriously dig in to these anytime favorites.
INGREDIENTS
Makes 12
Muffins
2 teaspoons cinnamon
2 cups all purpose flour (keep a little extra on the side to dust the apple slices with)
1 and a 1/2 teaspoons baking powder
1 cup of sugar
half a teaspoon of salt
2 cups of apples small dice
half a cup of milk
2 teaspoons of vanilla extract
2 eggs
half a cup soft unsalted butter
Cinnamon sugar topping mix
1/4 cup granulated sugar
1/4 cup cinnamon
1/4 cup melted unsalted butter
Directions
Dice your apples and dust them with flour
Preheat your oven to 375 degrees Fahrenheit
Place your cups into your muffin tin
Mix together the salt, baking powder, flour, and cinnamon in a medium bowl and save for later
Mix together the softened butter, vanilla, and sugar until it thickens
Add the eggs one at a time mixing well before adding the second
Add the liquid slowly to the flour mixture and stir until just combined
Add the dusted apples and mix to incorporate
Scoop the mixture into the muffin cups
Bake until done (around 30 minutes)
Prepare cinnamon sugar mix by melting remaining butter and placing in a shallow bowl and allow to cool slightly
Place cinnamon and sugar in a separate bowl
When muffins are done allow to cool slightly
Dip muffin top in butter then roll in cinnamon and sugar mix and let finish cooling
And done eat up!
